HUMMUS
15 oz can of garbanzo beans, drained
1 clove garlic
salt to taste
1/2 tsp. lemon juice
1-2 Tbsp. tahini
1-2 Tbsp. EVOO
4-6 roasted red peppers
Put ingredients in food processor...
...and blend until smooth.
If you want to serve the hummus immediately, it's a good idea to put the can of beans in the fridge until you're ready to use it.
MY THOUGHTS:
The possibilities are endless for this recipe! I think next time I'll use roasted garlic and omit the red peppers. Also, this really is a GREAT way to save some money! The tahini ($6) and roasted red peppers ($3) were the most expensive ingredients - HOWEVER one can of tahini will make 15 batches of hummus, and the red peppers will probably make 8-10 batches. I roughly estimate that it costs $2.00 each time you make this recipe - compare that to the pre-made hummus that costs at least $4.00! (And I think it tastes SO much better than the pre-made stuff!)
